Set dosa / Set dosai - Yummy Combo Set Dosa-Vadacurry Recipe - Chennai Special Dosa Recipes

Set dosai or Set dosa is a thick, fluffy and spongy dosa variety which is usually served with Vadacurry or Vegetable Saagu. Set dosa and Vadacurry is one of the good combinations and is served in most of the hotels in Tamilnadu. This dosa is very soft and spongy and is also called as "Malligai Poo Dosa". Try this set dosa and enjoy.

Ingredients needed for making Set Dosa
2 cups raw rice
1 cup parboiled rice
3/4 cup urad dal
3/4 cup Aval
4 tsp. Channa Dhal
2 tsp. Thoor Dhal - 1 tsp
A pinch of Turmeric powder (Optional)
1 tsp methi seeds
salt as needed.
1 tsp. Sugar (optional)

Method for making Set Dosa
1. Soak raw rice, parboiled rice, urad dal, channa dhal, thoor dhal and methi seeds in water for 4 hours.

2. Soak the aval/poha or beaten rice for 1 hour.

3. Grind all the ingredients along with the beaten rice by adding enough water to get a dosa batter consistency. Add the salt and sugar and mix well using your hands. Allow the batter to ferment for 6 to 8 hours..

4. Add the pinch of turmeric powder just before you start making the dosas.

5. Heat the dosa tawa and pour a ladle full of batter and spread into a thick dosa. Do not spread out like you do for normal dosas. Add 2 to 3 drops of oil and close this with a lid. Allow this to cook in a medium flame.

6. Now open the lid and serve hot.

Set Dosa is ready to be served with Hot Vada Curry / Vegetable Saagu and Coconut Chutney.
