Healthy Mixed Vegetable Raita / Vegetable Curd Pachadi - High Fiber Rich Raita Recipes for Biryani, Roti, Pulav, Chapathi, etc.

Raita or pachadi is a popular Indian salad made using thick curd which is served with most of the Indian foods. Mixed Vegetable Raita is made using veggies blended with curd and seasonings. This Mixed vegetable raita is a easy to make side dish which goes well Vegetable Pulav, Vegetable Biriyani, Bisibelabath, Tomato rice, Brinjal rice or any other rice recipes. It is also healthy and good combination for roti, chapati, paratha,etc. Try this Vegetable Pachadi and enjoy.


Ingredients needed for Making Vegetable Raita

Onion -1
Tomato -1
Carrot -1
Capsicum -1
Cucumber -1
Pepper powder -1/2 tsp
Curd -1 1/2 cups (whisk it well)
Salt as required
Coriander leaves for garnishing
Mustard seeds -1/2 tsp
Cumin seeds - 1/2 tsp.
Green chillies - 1 finely chopped.

Method for making Healthy Curd Vegetable Pachadi

1. Wash all the veggies and then peel the skin of carrots and cucumber.

2. Grate the carrots and cucumber and chop the tomatoes, onions,and capsicums into fine pieces.

3. Heat a tsp of oil, add mustard seeds, when mustard seeds starts spluttering, add the cumin seeds and then add the finely chopped green chillies.

4. Next add the veggies one by one and saute just for 2 minutes.

5. Transfer the above mixture ina bowl and then add fresh curd to this and mix well. If the curd is too thick you can add some water.

6. Sprinkle the pepper powder and Garnish with finely chopped coriander leaves.

Mixed Vegetable Raita is an excellent Combination for Hotel Style Diwali Biryani.
