Manjal Poosanikai / Parangkikai Kootu / Yellow pumpkin kootu - Health Recipe

Manjal Poosanikai kootu is one of the tasty and healthy kootu variety which can be either mixed with rice or can be taken as a side dish for Karakuzhambu and even goes well with chapathis and pooris. The yellow pumkin is a low calorie vegetable rich in dietary fiber, anti-oxidants, minerals and vitamins. This is good for lactating mothers because it increases the supply of breast milk. Due to its low calorie content it is good for those who want to reduce weight. Good for growing kids and also for the elderly. This manjal poosanikai can also be used in making Morkuzhambu.

Ingredients needed for making Manjal Poosanikai Kootu

Yellow pumpkin - 1 cup finely chopped

Channa dhal - 1/2cup

Onion (chopped) - 1

Green chilly -  2 nos.

Salt to taste

Oil - 2tsp

To Grind

Grated coconut - 4 tbsp.

Cumin seeds - 1tsp.

green chillies - 1

For tempering

Mustard seed - 1 tsp.

Urad dhal - 1 tsp.

Red chilly - 1

Asafoetida - a pinch

A sprig of Curry leaves

Method for making Manjal Poosanikai / Parangkikai Kootu


1. Cook the channa dal with a pinch of turmeric powder in a pressure cooker for 3 whistles.

2. Add the chopped onions and Manjal Poosanikai to the cooked dal and cook in a pressure cooker for 1 whistle.

3. Heat oil in a kadai splutter the mustard seeds, fry the urad dal and red chilly, add the

curry leaves and now add the cooked contents from the cooker. Mix well and then add

the ground mixture. Leave this for a minute till everthing gets blended well.

Now Manjal Poosanikai / parangkikai  Kootu is ready.

Variations: Instead of grinding you can just add the grated coconut to the kootu and mix well. Using Coconut oil may increase the flavor and taste.
