Ingredients for making Carrot rice
Grated carrots - 1 cupRaw rice - 1 cup
Sambar powder - 2 tsp.
Chopped onions - 1 cup
Chopped green chilly - 1
A pinch of Turmeric powder
1/2 cup chopped Coriander leaves
Oil and ghee as required
mustard seeds - 1 tsp.
clove and cinnamon stick - 2
fennel seeds - 1/2 tsp.
Method for making Carrot rice
1. Wash and soak the raw rice for 15 minutes, drain the water and cook the rice using 1 and 1/2 cup of water with little salt and 1 tsp of oil. Cook this in a low flame for 10 minutes and take care it is not over cooked.2. Heat oil in a pan, splutter the mustard seeds add the clove, saunf and cinnamon and then the chopped onions, green chilly and saute them till they become transparent.
3. Next add the grated carrots, sambar powder, turmeric powder and salt saute well in a medium flame for 5 minutes.
4. To this add the cooked rice and mix gently.
Garnish with coriander leaves.
