Vegetable Paratha North Indian Special Recipe - Mixed Vegetable Stuffed Paratha - Breakfast Recipes

Vegetable Paratha is one of the healthy and filling stuffed paratha which is easy to make and is also an excellent wholesome meal for dinner. This can be cooked either by cooking the veggies and mixing with the flour or as a stuffing. Try this vegetable paratha and enjoy. This can also be packed for the kids as it is a well-balanced meal.

Ingredients for making North Indian Special Vegetable Paratha

Wheat flour - 2 cups
Turmeric powder - a pinch
Chilli powder - 1 tsp
Jeera powder - 1/2 tsp
Vegetables of your choice (carrots, beans, capsicum and cabbage)  - 1 cup finely chopped
Onion - 2 tbsp finely chopped
Coriander leaves - 1 tbsp.
Salt - to taste
Water - as required
Oil - 2 tbsp

Method for making North Indian Special Vegetable Paratha

1. Wash and Chop the vegetables into fine pieces.

2. Heat oil in a kadai and saute the onions and when they turn golden brown add the chopped veggies, salt, turmeric powder, chilli powder, jeera powder and coriander leaves.

3. Make a soft pliable dough with the wheat flour by adding enough water, oil and salt.

4. Make small cups and stuff the veggies and then roll them as parathas.

5. Heat the tawa and cook the parathas on both sides with oil or ghee.

Vegetable paratha is ready to be served with any of the below side dishes.
