Hot Spicy Ennai kathirika Kaarakuzhambu - Brinjal Oil Kaarakozhambu - South Indian Lunch Recipes

Ennai Kathirika Kaarakuzhambu is one of the tasty and spicy gravy variety which is served for lunch in all south Indian hotels and marriages. The spicy aroma of the kaarakuzhambu is because of the ground masala which is blended together with the brinjals. Try this and it really tastes good.

Ennai Kathirikai Kuzhambu


Ingredients for making Ennai kathirika Kaarakuzhambu 

Brinjals - 1/2 Kg
Small Onions - 1/2 Kg
Garlic - 1/2 cup
Tamarind - lemon sized ball
Channa Dal - 1 tbsp
Urad Dal - 1 tbsp
Coriander seeds - 1 tbsp
Cumin seeds - 1 tsp
Pepper - 1/2 tsp
Fenugreek - 1/2 tsp
Red chillies - 8 nos
A sprig of curry leaves
Grated Coconut - 1 tbsp
khus khus - 1 tbsp.
Salt - For taste
A pinch of Asafortida
Turmeric powder - 1/2 tsp

Method for making Ennai kathirika Kaarakuzhambu

1. Heat oil in a kadai fry urad dal, Channa dal, Coriander seeds,cumin seeds, pepper, fenugreek and red chillies. Allow this to cool and then grind this in a mixie to a   coarse powder consistency. Grind the grated coconut with khus khus to a smooth paste.

2. Chop the small onions and split the brinjals into four and fry them along with garlic till it turns golden brown.

3. Now take a heavy bottommed vessel, add gingely oil, splutter the mustard seeds, add the curry leaves a and then the
the fried onions, garlic, brinjals, Ground powder, tamarind paste, turmeric powder, asafoetida and salt.

4. Pour water and allow the mixture to boil.  Once everything gets blended add the ground coconut mixture and wait for a boil.

Now the hot Ennai Kathirika Kozhambu is ready to be served with white rice and Kootu.
