Sugar Cashewnut Adhirasam - Sarkkarai Adhirasam - A variation of Adhirasam - Diwali Sweet Recipes

Sugar Cashewnut Adhirasam is one of the new variety of adhirasams which you can try for this Diwali instead of the usual ones. I learnt this recipe from my sisters mother-in-law. Thank you Kanchana Maami for this lovely Vellore Regional Recipe. It tastes good and is rich in calories because of the cashewnuts. Try this cashewnut sugar adhirasam and enjoy this Diwali.

Ingredients for making Sugar Cashewnut Adhirasam

Raw Rice Flour (freshly ground) – 3 cups

Sugar – 4 cups

Cardamom Powder –  1/2 tsp.

Powdered Cashewnuts – 1 cup.

Oil as required.

Milk – 1 tsp.

Method for making Sugar Cashewnut Adhirasam

1. Take a heavy bottomed vessel add sugar and 3/4 cup of water and boil for 10 minutes.

2. Next add 1 tsp of milk, wait for a minute and then remove the dirt that rises up the vessel.

3. Stir well in a low flame and wait till you get one string consistency of the sugar.

4. At this stage you can add the rice flour, powdered cashewnuts and cardamom powder. Mix well and wait till everything gets blended well.

5. Now make small balls of the dough and then pat them like small pooris on a greased banana leaf.

6. Deep fry the adhirasams in hot oil. Always use a medium flame and fry till you get a light golden colour.

7. Remove and drain the excess oil by pressing in a adhirasam maker.

Sugar Cashewnut Adhirasam is now ready to be served.
