Carrot Coconut Burfi - Diwali Sweet Recipes - Easy to make Sweets - Festival Recipes

Carrot Coconut Combo Burfi is one of the delicious and easy to make sweet recipe which can be made using simple ingredients available in our kitchen. The combination of carrot and coconut enhances the taste and makes this a yummy sweet. This is a new sweet recipe and it tastes just like a carrot halwa but is more sweeter because of the addition of coconut. Try this tasty delicious sweet for this Diwali.

Ingredients for making Coconut Carrot Burfi
Carrot- 1/2 kg
Sugar - 1 cups
Grated coconut - 1/3 cup
Ghee - 4 Tbsp
Milk - 1 cup
Cardamom pods- 5-6
Almonds, pistachious and cashews for garnishing

Procedure for making Coconut Carrot Burfi
1. Wash the carrots in cold water, peel the skin and grate.

2. Now cook the grated carrots in a pressure cooker by adding 1 cup of milk and 1/4 cup of water for 2 whistles.

3. Next add grated coconut, sugar and ghee. Stir well with constant stirring till the mixture gets blended well and the sugar melts. It may take 30 to 45 minutes for the mixture to leave the sides and this is the correct consistency.

4. Transfer this into a greased deep plate, spread evenly to desired thickness. Then smoothen it and garnish with chopped almonds and cashews.

5. Leave this for 30 minutes to cool and then cut it into desired shape and size.

Now the Coconut Carrot Burfi is ready for Diwali. This stays fresh for 4 days when stored in an air tight container.
