Preparation of the batter for making Masala Kuzhipaniyaram

You can use your ordinary idli batter or can prepare the batter as described below. Both tastes good.

Idly rice-1 cup

Raw rice-1 cup

Urad dhal-1/4 cup

Fenugreek seed-1 table spoon

Soak all the above ingredients for 3 to 4 hours and grind well in wet grinder. Add the required amount of salt and allow to ferment for about 8 hours.

Ingredients needed for making Masala Kuzhipaniyaram

Small onions - 1/2 cup (finely chopped)

Green chilies - 3

A sprig of Curry leaves

Grated coconut - 2 tbsp.

Mustard seed - 1/2 tsp.

Urad dal - 1/2 tsp.

Procedure for making Masala Kuzhipaniyaram

1. Heat oil in a kadai, splutter the mustard seeds, fry urad dal till golden brown and then add curry leaves.

2. Next add the finely chopped small onions, green chilies and the grated coconut.

3. Add all to the prepared batter and mix well.

4. Next to the kuzhipaniyaram vessel add oil to all the holes and allow this to stand for 15 minutes so that the oil gets fully coated.

5. Now keep the vessel in the stove, add oil once it gets heated add the batter such that it should not fill the whole hole. Always keep in a low to medium flame.

6. Close the vessel and open after 2 minutes, turn the paniyarams using the stick provided.

Now the Masala Kuzhipaniyaram is ready to be served with karuveppillai chutney or coconut Chutney.
