Aloo-Gobi-Capsicum Combo Gravy - Sidedish for Chapathis, Rotis or any North Indian Bread Items

Aloo Capsicum cauliflower Gravy is one of the best accompaniment for chapathi, Roti, Naan and Parathas. It is a nutritious dish loaded with vitamins and fiber. Ingredients needed for making Aloo Cauliflower Capsicum Combo Gravy

Onion : 2 nos.
Tomato : 2 nos.
Ginger & Garlic paste : 1 tbsp
Cumin Powder : 2 tsp
Coriander Powder : 2 tbsp
Red chili Powder : 1  tbsp
Garam Masala Powder : 1/2  tsp
Cauliflower : 1 cup
Capsicum : 1/2 cup
Potato : 1/2 cup
A sprig of Curry Leaves
Coconut Milk : 1/4 cup
A small bunch of Coriander leaves
Oil as required.

Method Of Preparation of Aloo Cauliflower Capsicum Combo Gravy

1. Cut the cauliflower into florets and soak this in boiling water.
2. Drain the water from cauliflower and mix it with turmeric powder. Keep it aside.
3. Heat oil in a pan,  add onions and saute till it becomes transparent.
4. Add ginger garlic paste, tomatoes,salt and saute till the raw smell disappears.
5. Next add all the masala powders one by one and saute well till everything gets blended well.
6. At this stage add the cauliflower florets, potatoes and capsicum cut into cubes. Add little water and wait till the veggies get fully cooked.
7. Add the coconut milk and allow it to boil for 5 minutes.
8. Garnish it with coriander leaves.

The Spicy Hot Aloo Cauliflower Capsicum Combo Curry is ready to be served with Aloo Paratha or any Indian Bread variety.
